CANNED COCONUT MILK

Canned coconut milk is having more than a moment. Loved by paleo dieters, vegans, and foodies alike, the canned stuff can mimic milk and cream in recipes, from soup and curries to yogurt and ice cream, adding a rich milky texture without added dairy. After the coconut water is retrieved from the nut, it is de-shelled and the brown skin shaved off. After cleaning the white flesh with hot water steam, it is ground and freshly pressed with a screw press. The raw coconut milk is then homogenized, filled in BPA-free cans, and sterilized.
